Fun and Games

I have lots of ideas for games... but as a single human being with no money, and not enough personal skillset... its an almost impossible thing to make a game thats more interesting than premade 2D assets and no real depth.
I have looked at Unreal Engine, Unity, Godot, I even considered making a heavily modified version of an old idtech engine for sport... but the real underlying gap is always going to be 3D assets... you can AI your way through game systems, NPC behaviours, and huge mathematically complex RPG systems all you want. But media assets are always going to be the limiting factor for non-artists.
I'd have a really good try at creating my own sounds, those I think I could potentially manage... but god the idea of trying to create even small sections of a game world in 3D is so overwhelming it puts me off.
Has anybody found a solution to this that doesn't involve "just pay a 3D modeller and team of texture artists" like that wouldn't cost me 50k
